      Place the salmon fillet flesh side up (skin / scale side down) on a clean, flat surface.

      Find the center of the salmon. When you look at this fish you'll notice a line that runs right down the middle of this fish lengthwise.

      As shown above, take a sharp, long, thin knife, preferably a fillet knife and slice it right into that line, but don't cut through the skin on the other side.

      Then, as the blade gets down to the fish skin keep cutting and turn the knife 90 degrees and keep cutting. I can taste the glorious fish fillet recipe already :-)

      Cut the blade straight across between the skin and the flesh. Cut until the knife comes all the way out the other side of the salmon.
